My question may sound odd - I have a fridge (normal kitchen type). as you all know it colls to about 4-5 deg C. I would like to know if it's possible to change its theromostat' so that it will maintain a temp of ca. +18 to +20 deg C.

That's like 65 degrees Fahrenheit! Why so warm? That's even too warm for a wine cellar I think? And to warm even for beer. And too warm for anything to keep unspoiled over time. Is it for a non-food application?
I have never experimented with a standard fridge thermostat to see what might happen if say you set it to the warmest number and then ontop of that, screwed the thermostat adjustment screw as far about as it could go?
And I have been sitting here thinking what wrapping the stat probe in insulation might do. I think what would happen is initially it would delay the fridge from running, and the fridge would get warm, how you wish. But then, when it did run, it would run and run, and super cool it until the cool made it's way through the insulation. So then what likely would happen is you would get wild temp swings. So that would not work.
