buying a home that needs a little work. Previous owner put down a laminate floor, but did not put down any thresholds between rooms. He just left a space.

I'd like to keep the lowest profile that I can.... had it been me, I would have continued the laminate run throughout the rooms.

I know that expansion is going to be an issue.

What are my options?

I don't particularly like the trim pieces available for laminates. They are usually plastic wrapped pressed wood at best. I make my own, depending on the job at hand. Can you take a couple of pix of each doorway in question and post them on a site such as photobucket.com and copy/paste the HTML code to your reply post? That way we can better determine your course of action.
