I have a Honeywell Dehumidistat H46C1166 and the wiring diagram indicates R and H wires. The actual dehumidistat has a red and black wire. Am I correct in assuming the the R is the red wire and the black is the H wire??

Yes. I looked it up, they didn't exactly make the leadwire colors clear but since it's a single pole/single throw switch, it's not so important to know which is which.
