The wife is now using oxy/propane mix to melt glass. We want to stop using the bbq tank propane and switch over to natural gas. I know I'll have to find the right adapters at the torch end. Can I put a "Y" connector on at the nearby gas water heater and hose it in like that? Sound like a plan? Is the oxy/natural gas mix feasible?

No..I don't think its feasible or safe..
IIRC Propane has higher BTU content than NG as well.

and good luck finding a nat. gas orifice that will fit in your torch
