Vinyl and Linoleum Flooring - When/how to do the sheet vinyl?

Remodeling the kitchen...... We've removed the 4 old layers of floor and underlayment. All the way down to the original subflooring. Went through and screwed all the old boards to the joists all the way through the room. Put new subfloor down so the subfloor now matches the height of the original wood floor that adjoins the kitchen area......
We're going to put down the cushioned sheet vinyl that isn't glued. CURRENTLY the kitchen area is completely open to the walls, so we can do anything we need... I've done the leveling as much as a hundred-year-old floor is going to be level, and filled the problem areas so things are nice and smooth.
Should I still put down a layer of luan plywood where the sheet vinyl will go?
If so, should I put it through the entire room BEFORE installing the cabinets or wait and try to fit it in the area that'll be covered by flooring AFTER the cabinets are in? If I add luan, it'll make the transition from wood floor to vinyl a little higher, but not more than a quarter inch.
If NOT, should I put the sheet vinyl down BEFORE installing the cabinets or wait and it it into the area not covered by the cabinets AFTER the cabinets are in? If I put it down before, the cabinets will hold it down and I presume it'll stay nice and flat (at least the flooring store insists the stuff will stay nice and flat). BUT, if we don't like the sheet vinyl in a year, we're going to have to take it up and put down stone of some sort...

I would personally use luan and I would also put it down before cabs, for the transition to the wood floor I would use a 1/4 hardwood overlap reducer(kinda like a 1 sided T-molding) to hide the floor height diff. When you do the luan make sure you fasten it down correctly-my formula is 1 staple every 4-6 inches and 1 staple every 1/2 inch down the seams. Ardex Feather finish the seams.

:)And if possible put the vinyl down too before the cabs. This will eliminate alot of cutting in-you can always razer cut along the cabs to remove it in 15 years.

Well, guys, it's not a problem any more.............
Instead of sheet vinyl, my wife has now fallen in love with a double-pressed, porcelain floor tile, so we'll be putting that down instead.....
I wish she'd make these changes of mind BEFORE we buy the stuff!
