There is a 5/8" gap between a wall and the door trim. It is being filled with painters caulk, is this something that is done often? It is also being done on smaller gaps between the drywall and the window trim.

Welcome to the forums!
A gap of that size needs backer rod inserted past the trim before it's caulked. Woodwork in a house should fit better than that. The carpenter should have either added trim to cover the gap or altered the trim so it fit better.
All joints, including where the trim meets the wall should be caulked prior to painting.

Actually I have never seen more than one or two sport as you describe in my life. My gosh, that is what the trim is for. The old finger point excuse, the carpenter says it is the sheetrocker's problem, the sheetrocker says it is the carpenter's, and they both insist the trim guy should have fixed it.
Were the openings framed to the wrong size or did you change window/door sizes? I can't tell you what to do, but my house, I would want it fixed RIGHT.
