Welcome to the forums!
It's best to use a penetrating stain which is meant to have the excess [what isn't obsorbed by the wood] wiped off. Once dry, several coats of poly or varnish are applied to protect the stain and the cabinet.
Even if you wiped off the excess, an exterior stain would try to repell the poly/varnish preventing a good bond.

What color are you wanting to use?
Your local paint store should be able to mix up most any color interior stain you want.
