I just installed a triple 2x12 beam between two rooms. Ceilings are only 8ft high so I want to leave as much clearance under the beam as possible. Can I just drywall the sides of the beam, use corner bead, then just skim-coat the bottom of the beam (no drywall on bottom)?

It isn't the best way but sure. Tape the joints between the planks with quickset then embed some 4" fiberglass mesh in another coat of quickset then skim until it suits you. It might still crack. It that happens then rip off the cornerbeads. put on a piece of 3/8" rock and new beads and finish. Personally, I think it will work. You might want to paint the bottom of the beam with some bonding agent before you tape and skim
