I'm installing porcelain tile over plywood to make a bathroom countertop. My question is what is the best adhesive to use to set the tile? Modified laytex thinset? polymer thinset? Mastic? Acrylic adhesive? etc.

Don't install it directly over plywood. Use concrete backer underlayment, either durock or hardie backer in 1/4" and seal your seams with proper tape and thinset. Then you can install your tile with modified thinset or mastic.
