The best way I can describe what I'm trying to do would be to compare to a drill press. I'm trying to figure out what to use to be able to adjust the 'drill' up and down into fixed positions. I need something that I can adjust to sit at numerous different heights at any given time.
For example.. the 'drill' will need to stay at 1", 2", 2.25" at different times. I was thinking of using a threaded rod with a nut but perhaps someone has a better idea.

hey, not sure what set up you are trying to do. Instead of the threaded rod, you could use a steel rod with holes drilled in it, at the certain stops you want. use a small bolt or cotter key as a keeper.
