after the room reaches the desired temperature the fan doesn't shut off so the gas burners won't come back on

Are you talking about the fan that circulates air around the house, or the small fan in the burner compartment of the furnace (called an inducer motor)?

I don't know of any furnace where running the fan would prevent the burners from turning on. I'd suppose the problem is elsewhere.

My suuggestion would be to post the make and model of your furnace obtained from the rating plate in the burner compartment of the furnace.

Turn the thermostat down until the furnace shuts off completely --- if the fan doesn't shut off, report that.

Turn the thermostat up to 80 degrees or so and report on the sequence of events you see and hear while watching the furnace.

With that information you'll probably get some help.
