I am working on some furniture that has been finished with MinWax Polyshade (polyurethane and stain). Is it okay to apply Formby's Tung oil finish over top of the MinWax?

Having never tried it, I don't know. Polyurethane is notorious, however, for not liking other finishes.
I would suggest trying it in a concealed area, like the bottom edge of a drawer, or a hidden section of leg to see what happens.
As with any finish (especially mismatches), you should sand lightly to give the new finish a "tooth" to hold on to.

I am not sure WHY you would want to use Tung oil over the polyshade. Are you trying to age it some or give it a waxed look. IF YES use furniture wax, even a tinted wax for a nice SOFT warm aged look instead.
