I am currently trying to strip old cabinets (house was built in mid-1800's). I've been using a citrus-type product which removed the many layers of paint <7 in all!> but there is one final layer of old stain that I am having difficulty bringing off. The wood I can see beneath it appears to be knotty pine. Should I sand the last stain layer? Then use more remover? Once it is removed what is the best type of product to use to seal the cabinetry without adding color?

Stripper of any kind has only a minimal effect on stain. You could sand, but I'd suggest using a bleach, instead. If ordinary household bleach doesn't lighten the wood up enough, try oxalic acid. It comes in a powder form which you dissolve in hot water and brush on. It's available at any good paint store
