The installed has laid, grouted and sprayed a sealer on my backsplash, but the sealing did not bring back the vibrant color of the original twists and tiles. How can I enhance the color? He did not seal the tumbled marbled or the twists before he laid it.

They have stone enhancer sealers available. I would suggest getting some, and applying it on a test piece before you apply it to your blacksplash.
You also might have to get a sealer remover if you put the enhancer on the backsplash.
Have you called the installer? If likes his customers happy, he will fix it.
