Well, the cause is the cold water in the tank that will condense out moisture from the air, but you already knew that. Some new tanks come with an inside insulating liner to prevent sweating. As for solutions for existing tanks, find a way to line/insulate your tank, mix in hot water, or dehumidify the bathroom. Check out a big box store to see what the new one use.

They used to make styrofoam inserts that could be installed in the tanks...not sure if they are still out there. I also seem to remember some sort of mixing valve that could be connected to the hot water line.....
