Do you think I could drop the temperature at night from 72 degrees to 69 degrees and program the thermostat to bring the temperature up one degree at a time with a couple of hours in between and not have the heat strips come on?

Some newer tstats have a mode that slowly ramps up the heat so that the aux heat will not kick on. Carrier calls it Smart Recovery, with others giving it their own name. But you are correct, ramping the heat up too fast will bring on the heat strips.

Honeywell T-stat has smart-recovery, and higher end t-stat like Honeywell's VisionPro, or IAQ stat will allow you to lock out the back up heat with an outdoor sensor.
