Hi, my question is about which materails to use on the bathroom walls and ceilings.
The ceiling has 16 on center. Should I use 5/8 'rock?
As for the wall...
1. The shower is going to be a poured floor and tiled walls. What does one put on the wall in the shower area? Greenboard? Cement board? Both?
2. The rest of the bathroom? Is regular 1/2 'rock okay?

Do you really want to hold a 5/8 board over your head when you can use 1/2" cieling board.
1. Cement board(better product $, pain to work with) or Dens shield(fiberglass coated sheet rock)
2. Green board(better product $) or standard 1/2"
Good to go.

While 5/8" rock is always better for a ceiling, I'd use 1/2". Unless the framing is all out of wack and you need to do a lot of shimming, no one will ever notice the difference....... and you will have less scrap leftover, not to mention that it's lighter and easier to handle :D
Regular drywall is just fine for the walls and ceiling - no need to use green board unless local codes dictate. Be sure to prime and coat with a good latex enamel [any sheen] preferably a kitchen and bath enamel.
Cement board is the industry standard fort wet tile applications. Use it instead of drywall at the tub surround.
