I made cornhole boards and painted a Deer on one and a Bass on the other with craft paint now i want to coat them to protect them for ware and elements . What can be used over latex paint without yellowing other than a spray ? I made a mistake on one it turned yellow

Water based polyurethane is the only thought I have.

I am trying to cover latex drawing of a deer and bass for ware and weather on a cornhole game the first one I coated with poly and the board turned yellow then I used a spray can and that came out uneaven also I did a Gibson guitar and i don't want to ruin that . What would you do

All oil base poly/varnish will yellow/amber both the wood and any light color paint. I don't know for sure [I rarely use it] but I think the spary cans of poly are oil base. The only varnish/poly that is rated for exterior use the spar/marine poly/varnish.

I don't know how it would work on wood but you might try an automotive clear coat. I'm pretty sure you can get it in an aersol can.
