I am in the process of doing a remodel. 12x12 ceramic tiles were removed from concrete slab in order to install glue down pre-finished strip wood floors throughout house. It was discovered that I had to replace all the existing plumbing lines from cleanout to the bathroom therefore a long trench line was dug up and then filled and re pour of concrete. The concrete was poured on a Monday afternoon and by Wednesday afternoon my subs were laying Mapei WFM atop. It's 4 a.m. and I can 't sleep because i am worried "what if the concrete wasn't completely dry?" Wood floors start going in Thursday and I move in on Monday. What are the consequences if there is still moisture trapped below the WFM?

If they applied the WFM correctly with the right trowel to measure and give the correct thickness of the membrane barrier, you will be just fine. That is what the WFM is used for. The WFM, must cover the entire installation, not just where the concrete was modified. The moisture will take the path of least resistants, and show up just outside the membrane if they don't do the entire installation.
