I'm adding a kitchen and have an uneven strip wood flooring I'd like to finish in some way. An overhead view of the unparallel segmented flooring looks something like this:

Without redoing the wood strips or the out-of-level superficial
joists underneath them, what can I do to this floor to 'finish' it?
Are painting and carpeting my only options? I believe my circumstances eliminates tile, wood, and vinyl.
If those are my only two options, then painting it is. Are there any options to eliminating the seams (leaving them would make the floor hideous)? Floor leveling is not supposed to be used on strip wood due to expansions and contractions. Caulking might work but sounds tedious. Any paint out there that is thick enough to fill the seams in a couple of coats?
I heard somewhere that Epoxy-Coat or a similar product could be used on strip flooring, but I cannot find any proof of that. Seems like a decent solution if it will work okay.
