I've done some brick work, brushing the seams to make them smooth. Now that it's dry I have mortar everywhere the brush landed to smooth out the joints. Do I simply go over the area with a stiff brush and water? Will this weaken the joints...do I even use water?

After you use the soft brush, you will use a wire brush. No water.

From how it sounds, you did not really do it right, but it should be OK. Just put the wire brush to each brick ASAP.
