I have a covered porch. The floor has a 1/8" slope per foot, is double 5/8" T&G plywood glued (PL Premium) and screwed and offset over 2X10's on 16" centers. The joists are insulated with pink and sealed with 10 mil plastic.
The porch is open on 2 sides and will get wet. It needs to be watter proof to protect the structure.
I really want tile but my local flooring store said he won't guaranty it? What else can I do, I don't want it to be slippery so I thought a porcelain tile that resembles slate.

a Porcelain tile will be good.
for a water proofing you could use Schluter - Ditra with Kerdi Bands or Noble Deck.
