I am in the process of refinishing my cabinets. I am completely stripping them, and sanding them down. The concern I am having now are the end and bottom panels

They are a plywood with a laminate sticker type coating. How do I replace this?

You could replace them with 1/4" plywood - oak, birch and luan are easily available at a big box - other species may be harder to find, maybe special order.
