I would like to put a nice (white) wood topper on my plain dry-wall half wall between the living and dining room. I have access to a router, and I saw a design show where they used a regular molding piece to connect the piece of wood on top with the actual wall, but I'm not sure A)how to connect the wood to the wall and B) If I need the molding if I use a router to make the edges look nice.

Any and all input appreciated!

Use some 1x for the top of the wall. Make it overlap by 3/4" on the sides. If you have access to a router, I would round over the edges. To dress up underneath the top, either use some code moulding, some quarter round or even some casing to match the rest of the doors in tour house.

You would nail the wood to the the top of the half wall, set and putty the nail holes and apply the final coat of enamel to the wood.

Assuming you have corner bead currently on the top of the half wall edges, you don't have to have wood trim under the edges to hide the gap - it can be caulked - although IMO using trim underneath looks nicer.

btw - welcome to the forums!
