We've recently had a leak in our ceiling, and in the repair we're trying to match the texture. Sadly we are at a loss. Can anyone identify this texture and/or tell us how to do it?

It is technically called skip troweling. The drywall compound is laid on rather thick, then troweled with either a 12" drywall knife, or a 10" mason's float (my preference for balance). You just "skip" the trowel over the area until you get the desired swirl effect.
