is there an easy way to hide or remove a ugly, thick texture on old plaster walls and ceiling?

Your question didn't say what you where looking for as replacement finish. The best way if you want a nice smooth finish is to cover with 3/8" blueboard and have a plasterer finish the job.
Blueboard is similiar to drywall. The plasterer puts on a very smooth finish around 3/16 thick. Plus can do a lot of other type finishes too.
Not super cheap but sure beats trying to cover an old rough surface some other way.
Look in yellow pages for any plasterer.
