I am planning on putting in a wood countertop in my guest bathroom. I have already purchased a piece of reclaimed wood, I think it was a drafting table. I think it is birch but not sure. I plan to use Watco Danish Oil stain in cherry. So what is the best option for a top coat. Varathane, shellac, wax?

I'd use poly, mulitiple coats!!!

It wouldn't hurt to also seal the underside and edges at the opening where the sink bowl goes - wood finish and water don't play well together :D

I agree - minimum of three coats of polyurethane, sanded lightly between coats.

Yes, poly. I'd suggest at least semi-gloss if not full gloss. If you don't like the full gloss, make it the first coat. The next two coats will soften the gloss and you'll still get the protection.
