Lighting, Light Fixtures, Ceiling and Exhaust Fans - valance or track lights covered with moulding????

We're DIY people and have this project which is proving to be a little more difficult that I expected it to be.
It is a great room 16X24 with cathedral ceiling. We have not sheetrocked it because I am undecided what kind of light system to have over the 16' wide walls. Sometimes I think I would like a valance with flouorscent lights behind it; other I think track lights would be better if we cover them with some sort of crown moulding. Rope lights need transformer and I don't want to bother with that, etc...

My husband is doing the work, and he says I am driving him crazy because I cannot decide which way to go.
I want to have lights along the the two 16 foot walls above the windows so the lights will shine on the cathedral ceiling...
I worry the valance, sofit or cove or whatever itis called will protrude into the room and look awful.
Track lights by themselves seem too functional...
I will have a crystal chandelier, a couple of sconces and probably some track lights on the windowless walls...
