I am having a difficult time removing the plastic covering from the fluorescent light fixture in my kitchen. I have tried bending the two sides together; to get the sides to bend in, etc... no such luck. I would appreciate some assistance on how to remove the plastic covering. Thanks so much.

I have one similar to that in my laundry room and I find that sliding the plastic to one end and then "playing" with it at the other end gets it loose.
One end may be better than the other.

That fixture looks like you need to remove one end or push up on the center of the lens on one end and slide it to towards the end letting the other end drop out.
Maybe push in on the top edges and slide to one end.

you have to lift one of the long sides up. twist it out a little and then pull it down.... it has catches on both sides...
