I keep hearing conflicting comments about the hardness of Bamboo, it sure seems hard but others say it is not, on samples of Maple and Bamboo the Maple seemed to dent just a little easier. Is there any hardness data available?

There is old growth Bamboo, you will pay a premium for it, as it is now very rare. It is hard and the psi ratings you always see, are referring to it.
What we get these days in the low cost bamboo, is not old growth bamboo. it is harvested in a short growth life. The grass cells have not fully matured, and the structure is not as stable or as hard as old growth. It is 2x's less stable then red oak, and less hardness then red oak.
