I have a very old house and I'm trying to replace bathroom light. Both wires coming out are covered with some kind of cloth(I think) and are the same color. How do I know what goes to what? Also the new light has 3 white and 3 black wires each color tied all together. Do I attach all black ones to one of the wires hanging out and do the same with the white?

Use a non contact tester also known as a tick tester and see which wire is hot when the switch is on. Connect all the blacks to the hot wire and all the whites to the non hoht wire.
