I am planning on replacing my existing laminate countertop with one of these 2 products. What are the benefits drawbacks to each. I love to cook so I will use this to prepare some messy stuff. Does one have a stain resistance advantage over another. What about heat? Does one handle an accidental hot pot put on it without burning better than another? Any help would be great.

Not to familiar first hand with them all, but from what I've heard, Silestone is pretty nice. I've heard it doesn't stain like a granite either, and doesn't crack like granite could.

Both products can take some abuse. Silestone isn't likely to crack but neither is granite except under extreme circumstances. Both can be refinished. Silestone may scorch whereas granite will not. Silestone shouldn't stain but later in its life it may. Granite isn't easy to stain but any natural stone can be stained to some degree.
Granite has taken kitchens by storm and continues to grow in popularity not hearing any complaints about granite at all.:)
