We have a family room that was added onto the house in the 70's and was built on what was an exterior flagstone patio. We want to level the floor and then pad and wall-to-wall carpet it. What is the best way to level the floor -- some kind of self-leveling compound or concrete?

if it were mine,,, i'd place 2x4 p/t'd sleepers on the stone w/3/4" t&g ply on top,,, warmer & easier on your feets.
it'd take a very skill'd specialist to level w/extend'd polymer-modified concrete,,, no compound of which i'm aware OR/& concrete, as you define it, will work - bonded OR unbonded,,, unless you're moving soon in which case don't worry about it :D

It is a freaking family room. Make sure the flag is clean and sound, get some self leveling underlayment, and pour it so the thinnest area is 1/8" thick. Let cure, place pad and carpet. Easy but not cheap.
