I have a fieldstone foundation that was coated with some type of sealant that turned into something like a thin wall of plaster. That coating is now starting to crumble and break off and the mortar in the foundation underneath is also turning to dust. My house is over 60 years old and I was wondering what products I should use to build the whole thing back up? I've done repointing on the stone chimney I have so I know the task at hand, but prefer not to pay a contractor as I'm sure it will cost a lot. Any suggestions?

is that soil acid & wtr have combined to eat the lime in the mortar causing aforementioned dusting as it fails,,, that coating might be whitewash which, as i recall from an early childhood on a dairy farm, was lime & water.

the technique of repointing's not difficult as you already know - just labor intensive,,, i'll be using latex-polymer modified mortar when its my turn,,, are there 'weeps' at the btm of the walls for drainage ?,,, ck your ext grading - can't hurt to have grades directing wtr away from the house.
