Hi,

We have an old range in the kitchen. When the oven is on it will heat up to the desired temperature at which point the heating stops and the oven temperature will fall by 20+ degrees before it begins to heat again. The oven also seems to make a loud clicking sound right before it begins to heat up again. Does anyone have any idea what might cause this behavior? The thermostat seems like an obvious candidate but the small bit of research I've done suggests that a bad thermostat would normally lead to the range being consistently off (i.e. oven temperature reads 250 when set to 300), not swinging all over the place.

Ovens do not maintain a constant temperature the whole time they are in use. Having a differential (temperature range when the burner turns off and turns back on) of 20 degrees does not sound out of the ordinary. Maybe someone else can chime in.

An oven temperature must remain constant. Within about 5 degrees of the set temperature to bake properly. If not, items like cakes and breads that rise during baking are very likely to fall and become flat. Many food items will not bake fully internally, etc.

If the ovens set temp either rises above or drops below the set temperature of 25 degrees either way, above or below the set temperature, the thermostat needs a calibration or is defective.

Temperature swings and failures to reach or maintain temps happen to a thermostat through normal wear, time and usage. Thermostat has to be replaced or must be calibrated by a professional appliance service agent. Calibration is not a do it yourself task.

Retail parts dealers and appliances parts stores can also help determine what the possible problem may be based upon that specific brand and model. Bring the make, model and serial numbers. Dealers and appliances parts stores are listed in the phone book.
