I was wondering if it is possible to cut a porcelin sink out that is under granit tile. We want to put a new top mount sink in.

It depends on how it was mounted. Sometimes they are clamped with screws in special fittings in the stone, like expansion anchors. They are also set in an adhesive. If it is silicone, RTV, or similar, you can cut around that to release the sink. If it is epoxy, that can be DIFFICULT without damaging the stone. If you can find the installer, they would be the ones to ask, or ask a local installer.

If your sink is porcelein over cast iron it could be a real PITA to cut. Check under the sink to see how the undermount is supported. Mine is held in place with a couple of 2X4's screwed to the cabinet. Silicone caulk seals it to the opening.
You may be able to disconnect the plumbing, remove the supports and lower the sink down. Getting it out of the cabinet may require removing the center stile.
