Propane convection oven won't ever get much hotter than 120 degrees, even with temp control turned all the way up. What are some of the first things to look at to troubleshoot?

Hello sgull. Welcome to the Gas Appliances topic.

One possible cause might be with the optional selections. Be sure the oven isn't set in the "Keep Warm" selection. Some ovens have an option at the end of a baking cycle that allows the oven to stay warm until manually turned off. Your oven may have this option.

Be sure there isn't an obstructions to the air flow in the oven. Any that would restrict air flow. Another possible but rare cause is a defective thermostat.

Need more specific info. Does this appliance have a touch pad display? Or a rotating temperature dial?

Retail parts dealers and appliances parts stores can also help determine what the possible problem may be based upon that specific brand and model. Bring the make, model and serial numbers. Dealers and appliances parts stores are listed in the phone book.

Thanks for the welcome. There is no option on these ovens (there are two of them with the problem) for keep warm setting as you mentioned. There are no obstructions to air flow (I checked). The ovens have a rotating temperature dial, not touchpad. These are commercial type ovens, standard size Imperial range ovens installed in restaurant kitchen. One of them gets only to about 120 degrees and the other never seems to get hotter than 250-300. I have source available to get parts, and have parts diagrams for these ovens, but am trying to do some initial troubleshooting before heading off on the wrong track. Any additional comments/advice appreciated. thanks

So far I tried replacing the thermostat but that didn't help. What else might I check?
