My husband is redoing our bathroom and adding a light fan combo. Right now the bathroom has a light over the mirror and one single pole switch. The power comes into the switch. We would like have be able to turn the light/fan on separately from the mirror light.

No problem just add another switch and run the cable from the switch to the new fan/light. If you want the fan and light separate, run a 3 wire cable and add two switches.

You do, however, need to bring the bathroom completely up to code. This means a proper 20 amp circuit for the receptacle.
