My husband and I are remolding our half bath. We are replacing the vanity with a pedetsal sink. The only issue we have run into is that the light over the sink was centered over the vanity and is now about 2 1/2 inches from being center. We would like to move the light over to be centered over the new sink. Can this be done by the average do it yourselfer? I would love any tips on how to do this.

Sure it can be. What is involved depends on how the cables are currently running. You can't make cable longer without some extra work but you can easily make them shorter.
If the move is closer to where the cables come from then move the box and leave the extra cable in the wall.
