When I sprayed my ceiling I used a perlite based compound. I was trying to go for the popcorn look but it turned out a lot thinner than usual. Whats the difference between perlite and typical popcorn? What type of compound is popcorn? Polystyrene?

Perlite is a sand type additive. Which is, as you found out, a lot smaller than the popcorn texture. The popcorn uses polystyrene balls which come in small medium or big size. If you want the popcorn look you can buy it in a bag. Mix it thin with water and spray over the perlite and you should be fine.
