The thermostat for my furnace is in the same room as a woodburning fireplace. Whenever we have a fire the room warms up and tricks the thermostat into thinking the house is warm, therefore the furnace does not come on and the rest of the house gets cold. My thought is to just mount the thermostat on the other side of the wall in another room that doesn't get affected by the fireplace. This seems like a simple fix but does anyone know of any potential problems with this?

If there is enough wire behind the wall, then go for it.

Have you tried to run the fan ON to help move the air around?
