In the past I used a shur line paint pad to cut in around ceiling and moulding. I bought a new $10.- 2.5" tapered brush. I wont use those pads anymore but I think I should have bought a 2". I have a 2" straight brush Ive used for years Its like an old friend. Is it ok to trim off the hairs that stick out? Ive done that a couple of times.

I've never trimmed a brush other than stray hairs. I'd be leary of cutting a good brush to an angle - I doubt you would be happy with it.
Small brushes aren't all that expensive and a good brush when it is properly cared for will last a long time. I'd recomend buying a new sash brush at the size you desire.

Buy whatever size you are most comfortable with. Personally, I use a 2 1/2" Nylox Angle-Sash Purdy, but if you are most comfortable with a 1" straight, or some curved 4" monster, feel free.
The important thing is to buy a quality brush, take are of it, and use it properly.
