I dropped a knob on our new black Whirlpool stove, creating a chip about 1/4". I rushed to Lowes' and got some touch-up paint and got it covered before my wife came home. She didn't notice it, and I've added a couple coats since, but it is still rough looking. Dare I sand it? I don't want to create a bigger problem. I've had issues on this in repairing furniture finish flaws.

Assuming it is a chip or scratch the trick is to fill the chip/scratch with the paint. This will take multiple coats! Be sure to wipe any excess off of the unmarred finish. Don't use any sandpaper but when you have got the area filled with paint - buffing might help.

With these factory finishes of appliances, that is all you can do. I promise not say anything to the wife. :)
