Trying to design and build a heat exchanger that will provide cool air for summer use. i intend to bury pipes deep into the ground, circulate water in them for cooling. then run the cooled water through a heat exchanger to cool circulating air. Question: will pvc work better than copper?

I don't think your going to have enough cooling capacity to offset the load.

What you're trying to accomplish has been thoroughly researched by two organizations:
(1) IGSHPA, and
(2) Ferris State University

What you are talking about are ground loops. They are the workhorse of geothermal HVAC units. Check them out on the web. Both organizations have plenty of design manuals.
