I put the mosaic 12"x12" stone tile pattern as a backsplash. How does everyone go about getting the tile cut and fitted around the receptacles & other areas? I've been using the tile nippers, but the work is slow and the results aren't the best.

2" stone tile? Like in 2" thick? or do you have a 2X2 inch tile.
Anyway, if you are having problems, a diamond bladed saw would make short order of the tile. they can be purchased for anything from table saws to circular saws to 4" side grinders.
remember; the trim plate will cover a slightly irregular cut (but it does not actually cover much). Oversized trim plates (the sign of really needing to cover up somebody elses work) are also available for many colors and styles.

Very carefully on a wet saw. Remove the piece from the backing first. If the piece is real small and you are uncomforable holding it then hold it with a pair of pliers. Cover the face side of the tile with a rag or something so you dont scratch it up.
Nippers will work but slow going and easy to crack the tile.

2"x2"x1/2" stone tiles. Some chip easily depending on the stone. I have a wetsaw, but do not want to run it so close to my fingers. Is there an attachment to hold such a small tile? I have about ~100 of these to do, so I was hoping to avoid the nippers. (Slow and error prone, as mentioned)

depending on how the table is set up, a c-clamp with wood pieces to prevent metal to stone contact should do the trick.
or you could make a jig the tile would lay in with a piece to retain it within the jig.
If the saw is not a fast saw, you could even try to hot glue the stone to the jig. I wouldn;t do it with a fast running saw as if it came loose, it could become a dangerous projectile or jam in the saw causing damage to an expensive blade.

My concern is that if I don't hold the tile, it will shift and the cut will be off. If I do hold the tile, I do not feel comfortable having my fingers so close to the blade.

Clamp the tile down and cut it with a diamond blade on your angle grinder.
