Camp Project - need to beef up ceiling insulation. The existing ceiling is exposed beams with a 3" thk. composite board on top of the beams. I plan to do knotty pine T&G on the ceiling between the beams. Could use more overall ceiling insulation. Looking for something effective and inexpensive to put between the knotty pine and the composite boards to increase ceiling R-value. Any guidance is appreciated.

A 3" thick composite board for flooring is alot! Is this a flooring to an upstairs room? Depending on how deep the beams are, you could add as little as R13 (3 1/2") or as much as R39 (9 1/2"). You don't want to crush the insulation, as that decreases its effectiveness. The knotty pine may look very "cabinish", and do well in your situation.
