I'm going to be installing a whirlpool tub by American Standard. They recommend setting the tub in a bed of mortar. Typically, would the mortar bed be placed right on the plywood subfloor or should I install cement backer board first? Also, how much is a bed? Can I use thinset for this purpose. Any advice would be greatly appreciated.

I used thinset when I installed my jetted tub. I mixed it fairly dry. I also placed a sheet of plastic on top of the mortar. That will keep the mortar from sticking to the bottom of the tub.
Backer board is used to provide a smooth surface for tile and a gripping surfacve for the mortar. It also sucks less water out of the mortar. In your case, you just want the support from the mortar so straight on the plywood is fine.
