Recently, all three of our toilets will sound as if they've just been flushed, but haven't. This doesn't happen at the same time, just periodically. Annoying, plus water waste.
Any advice?

Replace whatever your toilets use as a tank ball,,,,flapper etc.....as these have likely deteriorated and are allowing water to seep by them lowering the water level until the toilet refills itself.

I agree with spdavid, in that the workings may be going south. You may try just replacing the flappers, since this is the biggest culprit. Check the "at rest" water level to make sure it is about 1" below the top of the overflow tube. If all this fails, replace the inlet valve with a Fluidmaster 400 unit. They are simple and quite hardy.
