I built my own kitchen cabinets and the base cabs were partial built in place but unless I remember wrong the uppers were completely built in my shop and installed as 1 or more units.
IMO it would be a lot harder to build uppers in place than it would be to build them in the shop and then hang the completed [minus doors] cabinet.

In the wayback days, that is how many cabinets were built. But it is not a very efficient way to do things, but they seemed to last forever. Hard to do without two people. They often had no backs, just sides and the front.
