Hello.......I am trying to fix up myy kitchen until we can remodel. The floor is tiled (I have no idea what kind of tile), and the grout is old and a dark grey/brown color. I would like to change the grout color to a lighter color, to help brighten up the floor, but I'm not sure if this is possible. Would I have to chip out and remove all the old grout and redo it, or is there any way I can just put new grout over the old?

You can use a grout colorant. Try thisoldgrout.com or groutdye.com. No grout removal required.

You said the grout was old.... is the color you are seeing the origional color or has dirt/grime been ground into it over the years? there are many different products that can clean the grout to the origional color.
